Meet Simmie Vedi – Head Chef

We’re delighted to introduce you to our Head Chef, Simmie Vedi, with a wealth of experience in creating delicious, seasonal dishes that showcase the best in Welsh produce. 

Since she joined us in March, Simmie has launched our tasty new menu which sources sustainable, local suppliers to bring you food that packs a punch of flavour. Last year, Simmie represented Wales in the BBC’s Great British Menu cookery programme.

How did you get your break in catering?
I entered the world of catering in my early 20s, when I was studying law. I couldn’t see a future for myself in it and was encouraged by my father to chase my passion for food. Ten years later, here we are – and I’ve never looked back!

What’s your proudest achievement within your role at Chapter?
Hosting our first-ever Iftar and cooking up street food dishes at the Printed festival in June. I love events where we get to do something ‘outside the box’ and I can put my breadth of experience to work. It’s also a joy to take my team along when we have something different to do!

What do you like most about working at Chapter?
My team! I love my team! Each and every day they make me proud: the way they take pride in what they cook, and how incredible they are at executing what I’ve asked of them. All I’ve ever wanted from my job is to have a stellar team, and I’m so privileged to have that here.

Something about you that not many people know?
I can ride a horse Western-style whilst lassoing things!

Our caffi bar opens every day at 8.30am. Our breakfast menu begins at 9am whilst sell-out Sundays roast dinners with all the trimmings are available from 12 until sold out! Food service finishes at 6pm from Monday-Wednesday and 8pm from Thursday-Saturday. The bar is open late and we serve a range of tasty homemade snacks throughout the evening.
